Cider and Honey Glazed Roasted Carrots
This go-with-anything glazed carrot recipe is a keeper. We used baby-cut carrots so there is minimal prep. Everything goes into the pan together, so you can put it in the oven and forget about it.
Preheat oven to 450°F (230°C).
Toss together carrots, cider, oil, honey, thyme, garlic, salt and pepper in large bowl. Arrange in single layer in heavy roasting pan. Roast in centre of oven for 30 minutes; stir well and continue roasting for another 30 to 40 minutes, stirring occasionally, or until carrots are tender, golden and glazed. Discard thyme sprigs and transfer to serving dish.

1/2 cup (125 mL) PC Fresh-Pressed Sweet Apple Cider
3 tbsp (45 mL) PC New World EVOO Extra Virgin Olive Oil
3 tbsp (45 mL) PC Organics Pure Honey
3 sprigs fresh thyme
2 cloves garlic, halved
1 tsp (5 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
