15 Minute Supper Salad

Similar to a Cobb salad, this tasty main course salad features our roasted chicken breast strips. Buttermilk and avocado make a thick and rich green dressing to spoon over top.

Cooking Instructions

Place half of the avocado in blender or food processor. Add green onions, buttermilk, 2 tbsp (25 mL) of the olive oil, 1 tbsp (15 mL) of the vinegar and half each of the salt and pepper; blend until smooth.

In large bowl, whisk together remaining 2 tbsp (25 mL) olive oil, remaining 1 tbsp (15 mL) vinegar, and remaining salt and pepper. Add romaine and watercress; toss to coat. Transfer to large serving platter.

Place bacon on a plate lined with paper towel. Heat in microwave on HIGH for 30 to 60 seconds or until sizzling and crisp.

Arrange bacon, chicken strips, cheese, tomatoes and remaining avocado in rows over top of lettuce mixture. Spoon dressing over top to serve.
