Bollywood Bits and Bites

Sweet and spicy, crunchy and nutty, our gluten-free bits and bites make a perfect party snack. For a more attractive presentation, buy the big fluffy flakes of sweetened shredded coconut from the bulk area of the store instead of the prepackaged kind which has smaller flakes.

    4 tsp (20 mL) PC 100% Virgin Cold-Pressed Coconut Oil
    1 cup (250 mL) whole raw cashews (about 225 g)
    4 tsp (20 mL) tandoori masala spice
    1/4 tsp (1 mL) cayenne pepper (optional)
    1 pkg (200 g) PC Gluten-Free Pretzel Bites
    3/4 cup (175 mL) sweetened shredded coconut

Cooking Instructions

Preheat oven to 350°F (180°C).

In large ovenproof frying pan, heat oil, cashews and tandoori spice over medium heat, stirring until spices are fragrant. Place pan in centre of oven. Roast for 12 to 15 minutes or until cashews are golden throughout.
