You will need about two carrots and six radishes for this crunchy salad. Miso is a fermented soybean paste that comes in white, yellow, red and brown varieties. Find it in our stores near the sushi area; don’t buy miso soup mix.

Cooking Instructions

In large salad bowl, whisk together rice vinegar, sesame oil, miso, sugar, ginger and 1/3 cup (75 mL) cold water until miso is dissolved.

Add edamame, carrots, tomatoes, radishes, celery and red onion; toss with dressing until combined. Add spinach; toss gently to coat. Serve immediately.
