Lactose Free Mashed Potatoes with Green Onion and Grainy Mustard

Dinner guests lactose-intolerant? No worries, we’ve used lactose free sour cream and margarine in place of the usual milk or cream. The mustard in this creamy mash makes a perfect foil to sausages or roast beef.

    3 lb (1.5 kg) Yukon gold potatoes, peeled and cut in 1 _-inch (4 cm) cubes (about 5 large)

Cooking Instructions

Add potatoes to large saucepan of salted water; bring to a boil over medium-high heat. Boil gently for about 20 minutes or until potatoes are cooked through; drain well. Return potatoes to saucepan; place over low heat to dry slightly. Remove from heat; cover and set aside.

Meanwhile, in small saucepan combine sour cream, margarine, onions and mustard. Warm over low heat, stirring frequently, for 3 to 4 minutes or until heated through.

Add warmed sour cream mixture to potatoes; sprinkle with salt and pepper. Using a potato masher, mash potatoes to desired texture.
