Welsh Rarebit

The Welsh hunter came home without a rabbit for the pot and his wife was forced to improvise supper, or so the story goes. Serve with a salad or a green vegetable such as broccoli or rapini.

Cooking Instructions

Preheat oven to 400°F (200°C).

Melt butter in small saucepan over medium heat; add flour and cook for 2 minutes, stirring constantly. Pour in stout gradually, stirring constantly; cook for 1 to 2 minutes, stirring, or until mixture is thick and smooth. Stir in mustard, salt and pepper. Gradually add cheese, stirring until melted. Remove from heat.

Place bread on baking sheet. Toast in top third of oven for 5 minutes; turn and toast for 3 to 5 minutes or until lightly bowned. Remove from oven. Spread cheese mixture over toasts, dividing evenly. Return to oven. Bake for 5 to 7 minutes or until bubbly and lightly browned.
